White pepper is made from the essence of fully ripe berries from the pepper plant Piper Nigrum. The berries are picked and packed in sacks that are lowered into flowing streams. After one to two weeks, the pulp has dissolved and the kernels are put on a dryer. During drying the cores are bleached and given their light color.
