Västerbottensost® is a gritty-spicy hard cheese with character and strong aromatic taste, which has been stored for at least 14 months. The cheese has characteristically very flavor, with a sublime of truffles that appears best when it is the perfect balance between the cheese's broom and milk tender. In addition, Västerbotten cheese has an element of umami - the fifth foundation. The consistency is crisp, crystalline and juicy. Västerbotten cheese is appreciated both as toppings and dessert cheese, and is often used as a characteristic flavor in both classic and modern cooking. The mystery of why Västerbotten cheese can only be produced at the dairy in Burträsk continues to be puzzled. The recipe came by chance in 1872 and is still a well-preserved secret today.
